Feelin' HOT, HOT, HOT!

CHILI CHILI CHILI!!
(I am an avocado fiend, you may not want this much on your soup)

The Mister came home from work last night sick, sick, sick!

So Chili was just what he needed.

On a happier note:

I OVULATED!!!!! This may not seem like a HALLELUJAH moment to you, but this has been our biggest obstacle so far. 

Thanks double dose of Clomid. As much as I hate you, I love you too. :-)

Ok, Ok, here is the recipe!

Ingredients:

3 cans of White beans
1 medium onion, chopped
1 cup of cut corn (I use frozen)
1 or 2 cans of green chilis depending on how spicy you are feeling.
1 box (32 oz.) chicken broth
1/2 cup heavy cream
1 cup of mozzerela cheese
1/2 cup flour (for thickening)
1 pound boneless skinless chicken breasts, cut into 1/2-inch cubes
1-1/2 teaspoons garlic powder 
1 tablespoon canola oil
1 teaspoon salt
1 teaspoon ground cumin OR MORE!!!!
1 teaspoon dried oregano
1/2 teaspoon pepper
1/4 teaspoon cayenne pepper

Directions:
Saute the chicken, onion and garlic powder in oil until chicken is no longer pink. 
Mix cooked chicken, beans, corn, chicken broth, green chilis, heavy cream, and all spices in a soup pot. 
Bring to a boil and simmer for 5- 10 min.
Add mozzerla and flour (optional) last and mix until cheese is melted and flour is dissolved.
Serve with fresh cilantro and avocado.
